A lot of the roles posted are mostly focused on signalling growth. Plus a lot of companies never really learned how to hire, they just followed what ever comes out of silicon valley without thinking about it.

You should subscribe to more conference youtube channels. Definitely a lot less beginner content.

Depends on the situation. I use a mix of sticky notes and a notebook. If I am in a meeting then I just open notepad++.

A lot of meetings suck to be frank but if it is important then your best bet would be to prepare ahead of the meeting in terms of some of the questions you want to ask. Also sharing your views might be a good option as well. You can also ask your colleagues if they feel the same way and potentially change the meeting ritual.
